Recipes related to fruit/vegetables I grow or recipes related in some way to what is happening in my life right now, here in Tenerife, in the Canaries.
This is a simple but fantastic recipe given to me by Margaret, whom I meet whilst walking my dog, Casper.
Who
stated “no, I don´t have a sweet tooth”, this recipe although
simple and something you think you have had before, is truly
delicious, home-made.
Hot Chocolate with Marshmallows
(Nubes in Spanish)
Warning: Do not make if on a diet!
Ingredients:
Milk (any, soya, lactose free just what
you normally use)
Powdered Cocoa
Packet of Marshmallows or the Spanish
equivalent, Nubes
Method:
Pour some milk into a big mug and
either microwave it, until hot or pour into a pot and bring to the
boil on the hob.
Add two tablespoons of powdered cocoa
and mix well, making sure it is dissolved and no lumps form.
Cut up the marshmallows into
smallish pieces and put onto top of the hot chocolate, allowing them
to melt into the liquid.
When you are halfway through drinking
the hot chocolate add more marshmallows and let them melt, by the
time you get to the bottom of the mug there will be a gooey sweet
liquid that you can eat with a teaspoon.
It is a great pick me up in the middle
of the afternoon.

Zucchini tagliatelle with tomato and
basil sauce
Ingredients:
Fresh zucchini
Large, juicy tomatoes
Fresh basil
Salt
Olive Oil
Method:
Pick and wash your fresh zucchini
With a potato peeler or vegetable
slicer, cutting into strips, lengthways.
Boil a pot of slightly salted water.
Plunge the sliced zucchini into the
water and let cook for just a few minutes, remove and drain.
Chop up several large, juicy tomatoes
and put into a pot with a handful of freshly picked basil.
Heat until warmed through.
Lay cooked and drained zucchini onto a
plate and pour over the tomato sauce.
Drizzle with olive oil.
A tasty, Summer dish!
